Cinnamon Bun Chicken Rub
This is a fantastic rub for use on chicken. The odd name comes with the unique but amazing flavor. A hint of sweetness can be detected from the brown sugar and cinnamon which are noticeable but not overpowering. This rub produces an excellent roasted crust even when cooked in the oven. The name comes from the smell that will be noticeable when the food is cooking. My kids LOVED this rub on chicken thighs.

- ¼ Cup Brown Sugar
- ¼ Cup Curry Powder (I recommend Sun Madras Curry)
- 2 Tsp Kosher Salt
- 2 Tsp Garlic Powder
- 2 Tsp Ground Ginger
- 2 Tsp Cinnamon
- ½ Tsp Cayenne Pepper
- ½ Tsp Fresh Black Pepper
- Combine all ingredients and mix well.
- Use strainer or flour sifter to eliminate clumps, especially from brown sugar. You will have to shake this mixture well each time it is used as the brown sugar quickly sticks together when settled.
Store rub for up to two months in air-tight container out of direct light. This rub will work well on all kinds of poultry, including chicken wings!
