Dry Aged Beef @ Home

Dry Aged Beef.  It’s what any high end steakhouse serves and one of the main things that is difficult to reproduce at home with your normal grilling process.

Until now anyway.  Thanks to Seriouseats.com, below is a fantastic article on how you can produce your very own dry aged beef.  Let me know if you try this. I know I’m dying to myself.

Busy and beat

Today was another crazy busy day at work. Things didn’t start off well as I got all the way to work only to realize I had left my parking pass in my other car on Friday. I didn’t even notice on Monday because the gate was broken and held open (as it usually is lately).  After a bit of scrambling around I was able to find a general public parking spot a couple blocks away.  So much for being early.

Switchback posted a picture of their new bottles coming on October 22nd.  Looks like Longtrail finally has some competition.

Switchback has been a local favorite for 10 years now, but available only on draft and in kegs. It can be found in nearly any VT restaurant or bar and they have recently expanded to some restaurants in neighboring states. What makes Switchback so unique is they don’t go crazy with various types of beer (for years they had just ONE). They just make a few and focus on making them very well.  I wouldn’t say it’s anything “amazing”, but it is certainly a very good all-around beer.  Rumor has it that the brewery was run by one person (the co-owner) for years before finally expanding operations to keep up with the demand.

I also solved another puzzle from our CEO today. This one was quite easy although I have to admit that I fumbled around with it for while at first. As always, I thought it was much more complicated than it really was.

That’s all for now.  Time to get some rest.  I think I got 3 hrs of sleep last night so hopefully tonight goes a little better.
